Can egg shells really fertilize the soil?

They certainly can. Egg Shells are full of Calcium Carbonate (the same mineral that your teeth are made of actually.)
When I was a child, we had a small chicken co-op and a large garden. We used to put the shells in the compost pile all the time... and we had very rich soil when all was said and done :)
People are recommending coffe grounds - be very careful if you try his as it will kill many plants.
Coffee grounds will make the soil very acidic (thin about how acidic coffee is) and many plants cannot tolotate acidic soil.
Some plants that do love acidic soil include Azalias and Hydrangias
Yes. I would not substitute egg shells for traditional fertilizers but they add calcium carbonate to the soil... almost the same as liming your soil.
