Pumpkin recipes and preserving?
Question:My four year old daughter talked me into planting pumpkin seeds in the garden. Now I am ran over in pumpkins. I would like to freeze or jar them. Anyone got any recipes besides pie I can use this pumkin on? If you like you may email me at sidneyrholt@yahoo.com. Thanks

If you make Pumpkin Puree (which can be frozen), you can use it in many things, like: Pumpkin Soups (curry pumpkin is my favorite), pumpkin bread, muffins, cookies, pies.
To make Pumpkin Puree:
Cut pumpkin in half and remove seeds and as much of the "strings" as you can easily (don't worry if you don't get it all). Place the pumpkin halves cut side down on a rimmed baking sheet. Bake at 400 F for 30 to 45 minutes (depending on size). The pulp will be soft and the skin may turn a little brown. Let cool and then peel skin off the pumpkin pulp. Put pulp in Cuisinart and whirl until smooth (May need to do this in batches). Put a fine strainer over a bowl. Fill strainer with pumpkin puree, let sit for 30 minutes or so and let drain as much water as possible from the puree. Throw away the water. You can now place the puree in freezer containers (mark each one with the amount in the container and the date). Most recipes call for 1 to 2 cups of puree.

All pumkins can be eaten however..but some varieties are way more sweeter!
