you could do terracing, levels defined with wood or brick. or plant some kind of creeping flowers (like morning glory) or ivy
If you want to have beds of flowers or vegetables, you will have to build terraces into the hill. You can do that with railroad ties, landscape timbers, rock, brick, etc., to create a level area to plant in. Otherwise you will probably be limited to some sort of groundcover or vine.
yep these guys have a few good ideas.. but the thing is what is the purpose for this space , is it to be used to grow all the veggies you will ever be able to eat? then you will need to make the terrace thing. if you just want to stop the hill from falling into the valley then go see your local garden centres and ask to speak to their most knowledgeable person. also consider to ask about fire resistant plants, cause you never know.
