What do I do with all that rhubarb?
Question:Do I need to keep harvesting some stalks? Do I let it grow on it's own all summer? What can I do with it after I harvest it? Pie? Any suggestions?

Mostly, after you've harvested what you want, you let it grow. It won't get huge, don't worry.
Pie is wonderful. My mother also made jams with it, in combination with strawberries. She also would cook it down, and add a little sugar, and we'd eat it just like that. Very tart, very good.
If you have an over abundance of the rhubarb, use as much as you want for personal use, and sell the excess to an open air market in your area.

use it like celery almost. Make pie use in salads and stuff like that the taste is not for everyone
It freezes very well. Cut it, trim it,wash it, cut it into chunks, blanche and dry it, then freeze it by spreading it in a single layer on a baking sheet lined with parchment paper or plastic wrap. Cover it when you put it in the freezer, A few yours later, you should be able to put it into an airtight container of some type. Then label it, including the date.

I haven't had good rhubarb pie since my grandma passed away.
I sure miss it.
