Coppicing, it encourages the tree to sprout side branches instead of growing up. Easier to control and the favoured method for charcoal burners to produce a sustainable source. Also used on Willows to grow the thin branches known as Osier, used for basket work.

If you leave a stump of several feet in height to re-grow, it's called pollarding; if you cut it to the ground and it re-grows from there it's a coppice.
