I have a bamboo plant and I read on the Internet that you should not add fertilizer. I would like to know why?

It sounds like we are not talking bamboo but instead "Lucky Bamboo", which is a Dracaena. Often times it is potted in a bowl of rocks and water, an my understanding you do not fertilize it.
True bamboo is a heavy feeder and needs lots of fertilizer as it is a member of the grass family.

What type of bamboo are you having ? Generally, Bamboo need a lot of fertilizer, water and sunshine. I have stone bamboo and black bamboo line up along my house and the back yard. I fertilize them every 2 weeks with organic fertilizer and water them daily. and they grow well and green. bamboo can propagate very fast... within a span of 6 month, it is possible that they will multiple by a fold... so it is important to understand that it takes a bit of work to keep them tidy when planted on the ground... also, because of they shade (limiting the amt of sunlight that reach to their surounding), the amount of nutrient they take from the ground and the way that the new shoots pierce through the ground... not many plant can survive under them.

Fertilizer will kill bamboo because it doesn't come from it's native soil. Bamboo is native to China and India and is used to a wet, damp environment. Use Green Grow if you want the plant to perk up and be happy--they sell it everywhere you buy a bamboo tree, I even saw it at wallgreens. It works wonders, just a few drops every two or three months.
