What trees make a good natural fence?

depends upon the climate where you live..
Cedar make a good screen in most areas of the country.. Leeland Cypress will grow very fast (up to 3 feet per year with water and fertilizer). They are good for more temperate areas of the world.. They can be planted 8 ft apart and will touch in 2-4 years depending upon the size you buy them and how you water and fertilize them.

yews, are good for hedges and are evergreens.
Lombardi Poplar trees grow fast and can reach a total height of 75 feet. For a fence , plant them no more than 10 feet apart.

Natural: form and stature will help to create an organic natural style, and mixed species will lend a naturally created air to your garden. I love maples, and these should cope with your climate, depending on how hot and dry the summer gets. Even Japanese Acers would be wonderful, albeit, somewhat smaller for some time - fantastic leaf colorings. The Acers are bushy and foliage is lush, helping with the barrier effect. These trees are deciduous, so you won't have winter leaves.
Otherwise, consider some of the Oaks, slower growing, but fairly varied in their foliage, bark and stature.
You'll also need to consider the distance from property, as roots etc. will permeate underground and could cause damage.
If you want year round leaves, then Yews come in a range of leaf co ors:I've got some beautiful golden types, that spill out fresh golds each spring, over their darkened previous years leaves. Otherwise, European beeches, especially the Purple beech, will retain their previous years leaves during the winter, helping with privacy.
Really do consider the distance from property - roots and fallen branches are an issue. Also, what height do you want. Many conifers do not respond well to pruning. You could end with a mix of trees and shrubs, to get a naturally formed hedge effect. Common Laurels are useful evergreen hedging, small tree plants that have thick foliage, and can be pruned to the height that you want too.
