Don't overlook Oregon and Washington. The soils are wonderful, and the weather is better than you think. Also, I think land may be more reasonably priced than other states.
In Oregon, check out the Willamette Valley. In Washington, research the Walla Walla area which is fast becoming famous for grapes and winemaking.
An added bonus is that the temperament of the folks out here is surprisingly pleasant and laid-back.
All states can have great soil if you work at it and add what it needs. I have turned a sandpile into a rich soil that grows about anything. As well as the soil you need to think about the weather. It would probably serve you to be in an area that has a longer growing season. California may be a great state to grow things but the water is fast becoming a problem. You can plant it and you can water it but only God can make it grow. Best of luck, we need all the farmers we can get.
