I would suggest pruning the apial branches-going skyward to a bud union facing outwardly--and then pruning the lower limbs to a bud union facing outwardly. The new branches will come from whatever direction the branching bud is facing. Cutting the branch with a clean, sharp tool is important. I use a solution of 10% bleach to 90% water after making pruning cuts--this eliminates fungal and bacterial transfer to the wounds caused by pruning. If the trees are healthy there is no need for painting to cover the cuts. Good luck!
