Sounds like your taking on a project outside of your comfort level. If there is a home improvement store nearby, check with them for workshops being offered. They're free and very helpful. Regarding the sheetrock, do not let it get wet. If you are working indoors, ok. If this is a large repair, you may need an extra set of hands. And if it involves the ceiling you may need to build a "T" brace out of some 2 x 4's to hold it in place. For small repairs, use the sticky grid type tape instead of the normal paper tape.

Sheetrock should not be used in areas where it will be exposed to water and the elements; so it should never be hung on the exterior of a building, it is for interior use only.
If it were to get a few drops of rain on it while you were transporting it, from the store to home, you would probably be fine (let it dry inside before instaling it though), invest in some plastic or a tarp to keep it as dry as possible. But, don't let it get soaking wet at any point or you will have mold and cracking issues later.
If you are installing it in a bathroom, you should use "green board" which is treated to withstand some moisture from shower steam or the occassional splash. Cement backerboard is for areas reoutinely exposed to water, like the tiled areas surrounding a tub or shower.
