Make the hole either square or round, square is best or easiest, and then cut a piece of plasterboard to fit. If there are no boards to nail it to, put a backing board on top and put screws in to hold the piece in place. Get your tape and joint compound and put that on the seams, just follow the directions that come with it, and sand, paint and you are done.

One way to do it is to make the hole square. By this I mean, cut a section out just larger then the hole. Make sure you cut to the center of the studs. Cut a new piece of Sheetrock (the same thickness as the original), screw it in place to the studs, place joint tape on joints, apply joint compound to the joints and allow to dry. Sand the joints and reapply compound as needed to obtain a smooth surface. If the original surface is textured then you will need to apply a texture that matches before you paint.
