Proper way to sharpen a knife?

There is a sharpening system made by a company called Lansky. It uses stones, but has the added component of rods that hold the knife in the correct position (at the proper angle) so that it is foolproof. I paid about $35 for mine 7 or 8 years ago and it has been more than worth it. There are different angles for different types of knives, depending on the edge you want. A razor-sharp edge sounds like a good thing, but it will dull quickly, so in general you want a slightly less sharp edge on your everyday knives. Lansky allows you to choose.

I bought mine at a outdoor, EMS-type store, but they also have a website where you can find out where to purchase or buy online.

My dad's been a butcher for 50 years--gotta have sharp knives when he comes around for dinner and he's always happy with the job this sharpener does.

Yea...definately don't do it yourself because you can actually dull your blades further if you're not sharpening at the correct angle. Take it to the pros!
