I have a 4-drawer cabinet in a bathroom and 2 drawers (same side of the cabinet) don't stay closed and slide open about 1"
What can I do to fix them so they stay shut?

the drawer glides are installed wrong,, there is an indent about 1 inch back that the wheel should rest in,,this will keep the drawer in place,,even if it is out of plumb some,,, move the part on the drawer so the indent keeps the drawer back
Make sure your cabinets are sitting level. If not shim up the front and put some shoe-mold to cover up the gap.
It sounds like your cabinet may not be level. If it's not, you can raise the side of the cabinet that the drawers keep opening with a wedge (sliver) of wood. Start with a thin piece and recheck the level of your cabinet. If the drawers still open, use a thicker piece of wood.
If it is a leveling problem as you say then you can adjust the drawer slides. This may entail a bit of finesse on your part as it may be a bit difficult to reach in and remove a screw or two and put them back in in a lower location. If the drawer has two slides, one on either side of the drawer then you must lower them both slightly. Be careful no to lower them too much or you will affect the fit of the drawer. If the drawer has one guide in the bottom center of the drawer, then just lower the back of the guide slightly.
Remove one faulty drawer, and one good one, and campare the distance of the installed guides. They have stops built in and they can be slightly adjusted. They probably need to be adjusted out, but you can do it. It takes a few minutes. Make them all the depth of the functional ones.
Give the 10 to Cheezy. All this will take is removing the drawers, mark a line where the glides are now, remove the rear screws, lower the slide 1/16 or 1/8 and re-screw.

It may be as simple as something in the back of the draw opening, pushing the draw open. Sometimes, the things we stuff into a draw fall out of the back of the draw and keep it from staying closed.
To remove the draw, there are two metal stops on each side that you must reach in along side of the draw and squeeze as you pull the draw out.
Sometimes the simplist things get complicated by thought.

Sounds as tho your cabinet is not level. You will probably need to shim the front of the cabinet to keep the drawers closed
