Assuming you have done all your tear out and prep.Again assuming you have a breakfast bar and your counter is L shaped layout with full tiles on the inside of the L cuts go to the outside of the breakfast bar and against the wall.Don't forget to allow for v cap or bullnose edge.

lay out the area to be tiled before mixing any mortar, make sure it looks how you want it to before doing anything else.
Do the demolition first. Then layout. Then install the new.
I would start on the front edge, and do the best I could to center it from side to side. Personally I woud try to center it in front of the sink because that would be the most noticeable spot if it were off center. You just want to make sure that you aren't cutting slivers of tile for the edges. Space accordingly.
