Question:How good an area is this to go into for a career? I know it is pretty specialist, but is there a lot of demand for it? How much can you earn?

It is a specialist occupation. Lots of money to be made for a hard worker though. You will need to learn to do it properly before going into business.
It is hard to find people who even know what French polishing is and when you do, they are highly skilled and deserve every penney they ask to do it. In the antiques and design market there is a demand, but I would supplement that with other refinishing skills (like luthiery) in order to make a decent living. My guy is from Britian and can do amazing things with wood, so he does quite well. You might want to apprentice with someone in your area to see what the demand is there. We are in a high dollar design, restoration and refinishing market here in SoCal, so there is not only demand for the skill but for more people to enter the field. But, it really depends on where you live, too.
Look up Mohawk finishes. They offer courses on things like that. They cost, but if you are going into business, you need to be able to do things right. I only hope you are not color blind.

Why limit yourself to that. Professional furniture refinishing is in demand. Touch up is more in demand. Think of how many times y ou have seen something on Answers where a woman is asking how to repair a place where finger nail polish or remover has been dropped on an expensive table.
I think you can make $50 an hour or more. I have a friend who does just that in Atlanta and spends most of his time around board room and conference room settings for large corporations, like Coke
Why polish a French. They are already yellow.
