What is the best control for 2 ceiling fans(speed) wired together?

I'd do that a little different and here are my reasons and what I'd do. I'd wire both fans to a light switch then use a remote control. If you want to control both fans with the remote you set both dip switches the same and both fans will respond to one remote. You will be able to retain all functions of the fans that way.
If you set the fans for use with two remotes you can use just one and save some on your already "low" electrical bill.
The remotes will be included,,,Look on the box.
If you have already purchased the fans or they are already installed your stuck with what you have.

If I understand correctly, you're trying to control the speed of two ceiling fans from a wall switch. Basically, you're going to have to go with the generic control switch that has the off-low-medium-high setting and a bunch of wires coming off it, and then splice it to run to both fans. This switch will replace the pull chain switch on the fan. Follow the directions closely.
