The best way is to measure the windows, purchase custom sized windows that fit into the existing holes and then seal from weather.
Getting custom sized replacement windows is key to making this job as simple as possible. I did this to my house when I remodeled and it was probably the easiest process I did.
P.S. I except email.

Resizing is a major deal, if you are not familiar with home construction. The walls hold up the upper floors and roof. The studs hold up the walls. Resizing means cutting or removing studs. Something has to be done to carry the weight that was borne by the removed stud. This involves opening the wall up, by removing all the plaster, and reframing the opening to code.
It is far better, for a beginner, to order a window that fits the existing hole. Then all you need to worry about is getting weather tight and trimmed. Sometimes, you may have to resort to getting a vinyl window made to order. It's much better than compromising the structural integrity of the home.
lowes.com has a section with a "how to" go there and look up windows.
