I like to wait 72 hours when I have the time, just makes sure the thinset cures all the way, but you can go after 24 hours.

It all depends on the size of area you have to set. If the area to be tiled is small enough that you can reach the entire area without being on the tile then you can grout after a couple hours. On larger areas (ones you have to be on the tile to grout), you should wait overnight unless you are using rapid setting thinset.
Now rapid setting thinset can be grouted within a couple hours. The main drawback to using this is that you also don't have much time to set the tile before the thinset has set. Also, I have been told by a long-time tile setter that rapid setting thinset or rapid set additives to regular thinset are weaker - tile tend to release easier.
My suggestion is to set the tile one day and grout them the next if this is a large area.
