use food grade mineral oil.
Cooking oil on a paper towel, if its wooden of course. This only needs to be done occasionally. Rub on heavy and then wipe all excess off.
Wash it with warm soapy water, rinse thoroughly. Let air dry.
Then set your oven on 200, or the lowest setting, and let it heat up. Meanwhile rub the cutting board with salad oil. I use a paper towel, and really rub it in on all the surfaces, edges, etc. Then put it in the prewarmed oven, and turn the oven off.
I usually do this at night, after I do the dishes. Let the cutting board remain in the oven overnight. Next morning, take it out, and rub with a paper towel. Repeat about once a week for 4 weeks.
Cooking oils can become ransid, so the board should be washed now and then and re-oiled. Don't use anything but digestable healthy cooking oil.
dont use cooking oils , use mineral oil...

Season with walnut oil, and rub with a fresh herb or fresh garlic, depending on what you plan to cut in it.
Also -its nice to have a cutting board that you only use for onions and garlic.
Then a second cutting board for everything else.

CLEAN THE BOARD WITH SOAPY WATER . ALLOW TO DRY COMPLETELY.. APPLY MINERAL OIL GENEROUSLY. RUB INTO WOOD. ALLOW TO SIT FOR ABOUT 30 MINUTES AND REMOVE EXCESS WITH A PAPER TOWEL.. REPEAT ABOUT ONCE A MONTH.
