Where can I find a pressure/flow switch to put in a 15mm shower pump output line turn on an extractor fan?

this will not comply with building regs in the UK ..the extractor must come on when the light is switched on ..you are not legally allowed to do it any other way
You can obtain a humidistat that operates extract fan as air humidity rises, and switches extractor off after humidity level has fallen. Low voltage flow switches are available from some shower pump manufacturers. I am not sure that using mains voltage flow switches to operate wet area extract fans would meet with approval from shower pump manufacturer, or building regulations. Have you checked out the electrical legality of this ?
For safety sake I suggest you use an Infra Red sensor next to the fan when it is NOT CONNECTED to the water piping.
This will turn on when you enter the room and off when the timer has expired.
