What are some ways to put in a swing set in a backyard that is not level at all?

The reality is, for multiple safety reasons, you want the area of the playground to be relatively level. Having children playing on uneven ground is an invitation for ankle injuries. You should look into grading the area out instead of installing a swing set on uneven ground. Professional grading could get pricey, but if the area is significantly sloped, it might be the best way to go. If the area you're referring too is just irregular then consider renting a box scraper and going over the area several times to even it out. You could also consider burying the legs just enough to even out the set, but if it goes too deep you'll have safety issues with the distance from the top of the set to the top of someone's head.
You could pour a cement footer around the perimeter and fill it in with dirt and them top it off with play ground (triple ground) mulch.
If you really wanted to be safe you could wrap the footer with a piece of rubber or foam type thing.

Determine what size galvanized steel pipe will fit snugly inside (or if need be outside) the legs. Use pipe sections to extend the legs, and get the swing set level. The pipe should extend up inside each leg a foot or so. Drill two holes through each leg and "extension" and use 3/8 or larger machine bolts and double nuts to secure. Be sure to anchor the legs to keep the swing set from tipping over with the swing action.
