As far as cure time. I would give it at least a week ideally 2. when installing the walls of the walk-in they are either going to use a power actuated hammer to "shoot" the nails to attach the floor rails or drill and put anchors either way the concrete needs to be nice and hard or it will chip and or the anchors will not hold properly. When you drill and put an expanding type anchor if the material is not well cured as the anchor expands it will to varying degrees crumble the material it is trying to expand up against.


concrete needs at least 24 hrs to cure enough for any kind of weight to be place upon it. how cold it gets wont matter in the least as that is inside and your freezer puts out heat on the outside.
It depends on the temperature of the room in which you are pouring the concrete. The warmer the better. Still, you need at least 24 hours. In a cool basement it may take3 days if there is no fans or airflow to move the air(which would aid the drying). I am guessing the freezer is made of metal, so give the concrete some more time to dry so that the water can evaporate more out of the concrete freely, otherwise the moisture will collect under the freezer and rust out the metal as the moisture hits it and condenses.
As for the temperature of the freezer.that is the temp -inside the freezer- it should be well insulated to not feel that temperature on the outside.
