I think you will find this site really helpful.

It explains the science behind the air gap. there is no one standard for overall thickness as the air gap between the two panes changes with the manufacturere and the specification. just remember that wider gap doesnt equal better insulation. The panes of glass tend to be 4mm thick each. So, depending on the air gap you use, the thickness will be different.
Note that air gaps larger than 20mm should normally be avoided as the insulation is not so efficient
28mm - 4mm of glass either side and a 24mm spacer.
4mm glass and 16mm space in between the glass =24mm .
the 2 standard sizes are 24mm and 28mm but they also do a slimline for upgrading old sash windows which could be classed as standard that is 16mm
2 x 4mm glass plus 25mm cavity = 33mm. it used to only have 6mm cvavity but that was in the beginning.
You could get some made to fit stepped units where you have a 4mm glass panel fitted in rebates and the rest of the unit stands behind covering the wooden sashes, they look ugly and are hard to fix but as a stopgap they will give some thermal protection.
