What is the easiest and most economical way to change the tile grout color ?

You might try a re-finishing product. I used a product called Grout Renew by Poly Blend. It's a thick liquid that comes in several common grout colors. I used it in my shower and painted it on with an old toothbrush. My grout looks awesome now. Look for bottles of it itn the tile aisle at your local home center.
and make sure you seal it well...
go down to u'r craft store & get those 2oz btls of paint & take a brush or rag & wipe it over the grout. NOW over time it WILL come off w/o any seal on it from cleaning but just redo it or chg the color. I did it by mistake. I was painting my bath & some fell on the title grout & the more I looked at it... more I liked it.

Grout stain you can change it to what you want or use it to get rid of stains.It is available at good flooring centers it can be a bit expensive so shop around for the best price.
We just tiled a part of our kitchen and my wife didn't really like the dark grout we bought. Imagine that. So we had some good min wax wood die and she used a small paint brush and stained it. She and I are happy now.
If your wanting to go lighter color I doubt if this would work so I can't help you there, other than get a grout remover and re-grout it the color you wish.
