Are there different hot glues. If so, how do I know which one to use in my gun? Are there guidelines?

Jewelit has the clue. They are sold in two heat ranges, and probably varying sizes, even touting that they may be for "commerial" use.
Neither is strictly COLD however, as the lower wattage one often states on the packaging.
I use HOT GLUE a lot, but not do do sequins, etc on T shirts, or crafty projects.
You can compare the two types at Michaels or Joanns,,,perhaps Home Depot or Lowes "MIGHT" offer both?
The difference is about 300 degrees in temperature, though the glue properties are similar. HOT Guns usually take sticks approximately the thickness of a "Sharpie"... while the low temp guns are more likely to need sticks, closer to the diameter of a CHOP STICK. Once either GUN is at its peak for melting the glue... the HOT one will blister you.
Certainly caution should be exercised using either, and consideration in your notion of the USE. Cold is acceptable for craft projects, and the issue involves a couple of things,,, at least.
Assume you're applying "gem stones" to a T shirt, or picture frame, etc. The size of the item in your fingers might suggest that HOT is a bit risky. Beyond that; the COOL is easier to control in the flow, or "drippage". Then there may be the issue of WHAT you're using the glue on,,, IE: Certain types of synthetic fabrics, the mirror finish on the back of plastic gem stones; the delicate nature of feathers; OR in attaching FOAM CORE board in some model making situation.
I'll assume you have a USE in mind, and if you have a GUN already it very likely will accept only ONE type of stick.
Just an aside... HOT sticks are often sold in two lengths. The usual, approx. 3 inches; and the longer,,, approximately 7 inches. COOL are often not in two choices.
If your GUN accepts HOT sticks, and your projects are defined by consistency, then you may want to invest in packages of the longer sticks, to keep disruptions (inserting new sticks) to a minimum.

yes there are but the main thing is their size. Some are low or medium or high heat. Your gun should say or just take it with you and ask for help.
