If you know what a Guillotine is, then you must know how it works right? Great , first problem solved. Your next problem is finding the right material for the blade. My guess is that for a scale model of a Guillotine 1 1/2- 2 ' high ,your blade will have to weigh about 1 pound max. Guillotines work their nasty business by means of gravity, so a heavy blade is a must. Off the top of my head, the blade from a small wood plane might do the trick. You might be able to find a cheap one at Home Depot or Menards. If you want it to look authentic, that is to say an exact scale model. Then a cetain amount of artistic ability will be needed. I have built hundreds of scale models and have won dozens of awards for them, so I know what Im talking about, but I cant do your homework for you sorry. If you simply want to chop some veggies , then all you need is 2 vertical pieces of wood, parallel to each other, able to stand on their own, with a grove in each one for the blade to travel up and down in, and something to hold the terrified carrot in place while the blade does its job. Remember wieght is the key .A heavy balde is a Guillotines best friend.

scale it down so it chops off a carrot or something similiar in scale
Below is the plans for one. Scale it down to your size needed.

I wouldn't try it with a carrot. It would stick. Something softer, like a hot dog, would be better.
a bucket two side sticks of wood, a cross piece of wood, a blade made out of cardboard and foil, and a rope for holding blade
