How does one build a kumado?
Question:(tile oven)
Answers:
There was a Good Eats episode that might help. Alton used a red clay garden pot and base to construct an oven for smoking. If I remember right, he used a large terracotta pot with a hot plate in the bottom and the cord threaded through the drain hole. This required blocks under the bottom to avoid crimping and crushing the cord, and for ventilation. Inside the pot he put a round grill grate from a round grill. And then the base covered the top of the pot, the drain hole of the base was used to insert a replacement grill thermometer. I'm not sure of the temperatures this setup will withstand. The episode this was used in employed very low temps 200-250F. I hope this helps get you started, Good Luck
