its a massive no no. You are not allowed to touch any gas fitting unless you are corgi registered. You could be fined or at worst cause an explosion.
I'm not certain what you are asking. If you are asking how to shut off the gas supply to a gas line that is feeding a fire, the answer is that near where the gas enters the house either inside or outside or both, there are valves that will shut off the gas by turning them.

I hate to say it, but one, the question is unclear. I would assume this in not a fire in progress, therefore you would be speaking of a fire place. Most fireboxes have a loose key valve in the wall or in the floor. ( see the problems compounds.) It requires more than just doing something simple. There are more than one type of gas lines. I am licensed and certified in 4 major types in the US. They all have thier differences. I have been on many of service calls where the home owner tried to attempt this thierself and had the gas company shut it down and they got locked out. ( paying me overtime rate to fix the issue.)

Number one you don't do it yourself. Two call the fire deparment. three call your local gas company to disconnect. And lastly make sure you have something to put it out like a fire extinguisher or water to prevent it from spreading furthur.

Normally there are a couple of things you need to find before you can do this.
First look to see were the shut of valve is that supplies the fire, typically this should be close to the fire. When found close it fully.
Secondly you need to look how the gas line is connected to the fire, look at the end connection and purchase an appropriate blanking fitting to blank of the end of the pipe.
After blanking the pipe you will need to test for gas leaks, make a mix of washing up liquid and water. After turning the gas back on apply the water/washing up liquid to the area of the new joint. If there are not bubbles then the joint is good.
You then need to turn the gas at the isolation valve back off.

easy job, remember to turn the gas off first. cut the pipe and put a end stop on it. You can use compression fitting with the gas PTFE tape. AAs long as you know what you are doing then it is fine. Best to check british starndards regulations for gas pipe work just in case.
After the job you have to get a gas man in to test the whole system for leaks and get a report. You should also report the work to the local council just in case.
