Older wooden bridges used to have sides and a roof. Probably because they didnt have treated lumber, the sides and roof protected the structure.
To protect the structure from the weather. Wooden bridges that are covered last much longer than they would otherwise.
Originally, covered bridges were built so that the horse would not be spooked if they looked over the side, especially with long spans over fast-moving water. It's very hard to keep sides up by themselves, so the roof actually acts as structural support.
