Close the water piepes first. open the tap until all the water in the pipe (most of it) is out. Now unscrew the pipe (there's going to be some water coming out) and there you go.

What the other people said is all true. However, if it's an older house, what you'll want to be aware of is that sometimes when you remove and then replace the pipes, the valves themselves will begin to leak and need to be replace which is a much more involved job usually requiring someone with some plumbing experience. I have on occasion even had the valves almost disintegrate during the process.

Go to a plumbers merchant and ask for a tap spanner ,it is a special tool what allows you to get up behind the sink to the nuts on the water pipes .
Isolate the services, hot and cold either by turning the ballofix valves if fitted or mains stopvalve.
Undo compression fittings and or cut through the neseccesary pipework and renew as needed.
Reinstate services when complete and test.

Since the pipe connections to the old (and new) faucets are hard to reach behind the sink, and since there is little room, what you need is a BASIN wrench, not "spanner" wrench.

A basin wrench has spring loaded jaws that close when turning pressure is applied to the nut connecting the pipes (or holding the faucet) to the hard to reach underside of the faucet behind the sink. The jaws are located on the end of a long T-handle so it will reach into tight spaces and allow you to tighten, or loosen, the connection from below the sink.

The jaws only work in one direction, but they flip from one side to the other, to loosen or tighten, depending on whichever you desire to do.

The brand "Rigid" makes one with a telescopic handle to allow for adjustments, and it is of a very high quality. When buying tools, try to buy the best - it can make the job easier, and might work when others will not.

It is a very specialized tool, not good for much else, but a must for accessing this type of connection.
