Take some nice and firm tomatoes. The ideal ones are plums tomatoes, but you can try with others. Wash them first and then dry them. Next cut them length wise and cover them with salt. Put then on a sort of wire mesh and place them in the open under the sun for the day. In the evening you have to put them inside to avoid that they absorb the humidity of the night air. Take them back under the sun the next day if necessary and when they are dry rinse them with wine vinegar and then squeeze them.
Put them in jars with a few herbs that you like until you fill the jar making sure that the last layer is covered with oil. Seal the jar after a day to ensure that the oil covers completely the tomatoes. They will be ready in a month or so.
Alternatively if you don't want to preserve them in oil you can put them in paper bags and keep them in a dry place.
I do mine in the oven in one of those trays you make jam tarts in. 24 holes.
When you have a glut of toms, cut them in half across the equator, sprinkle on some salt and leave in the oven on a very low light for at least 6 hours. I use gas 1/4. 70c 150f.
After that I put them in jars with olive oil, herbs, garlic etc and store for the winter months.
Take a tometo, whatever it is, and dry it.
Exactly the same way as you would dry a tomato.
