When finishing oak how to accent the deeper grain so as to make darker without affecting upper stain?

If you are using an oil stain like Minwax, just rub it into the grain and then wipe it off - wiping harder in the areas that you want lighter. The more open areas of the grain will take the stain darker and the more closed grained areas will be lighter. But both will have the same basic color.
You can also leave more of the stain in the open grain areas to let it stay darker. Then you should let the stain dry a little longer than normal. You can apply extra coats of stain but it will only stay on the surface of the wood so it will need to have extra drying time and you will need to be very careful when applying varnish - might dissolve it and wipe it off.

Apply a dark oil base or JEL stain.( MinWax is a good one)Let dry a few minutes but not completely dry,then wipe with # 3 grade steel wool following the direction of grain.If not dark enough grain then do again.Vaccuum or dust with a Tac cloth.When completely dry, apply a light coat of water base poly. Let dry. Wipe with #3 steel wool as if sanding.Wipe off white varnish dust with a Tac cloth( obtained at a hardware store).ALL white dust must be removed.Apply lighter stain & let dry. Wipe with a Tac cloth. Apply final coat of poly.
WET THE BOARD FIRST,DONT SOAK IT,BUT USE A DAMP CLEAN TOWEL AND THIS WILL RAISE THE GRAIN. BUT REMEMBER TO LET THE BOARDS" SURFACE TO DRY BEFORE YOU APPLY THE STAIN,ABOUT 8-10 MINUTES!!!!!
