Replacing tile backsplash...I have removed all of the tiles with a prybar and a hammer...?
Question:The drywall behind has had some paper torn off it, and a few gouges, but is otherwise in good shape. Before I put on the new tiles I will fill in the holes with drywall patch. Is there anything else i should do like sanding or is this acceptable?

If you already have tile adhesive spread it and fill the gouges and Small holes with the adhesive at the same time. Larger holes will require masking tape or some other, taped behind the holes sticky side towards you (not as hard to do as it sounds) to provide a better base and also prevents the adhesive from simply falling through. Then you can set your tile. Making sure the tiles are pressed evenly and level as you go. The spots where you had the larger holes will need to be taped to keep them in place and will take longer to dry so, be patient.
If you Don`t already have the adhesive, fill the larger holes with wall board compound and smooth out level with the drywall paper feathering the edges thinly. If you have places where the paper was torn off, you can see where that "level" is. After drying sand lightly `til smooth and level. To check this, roll a round pencil or similar over the areas. Sand `til you feel no bumps or see no raised areas.
I don`t recommend drywall patch. It drys too fast, too flaky, and cracks easily and is typically more expensive than wallboard compound but use what works for You.

as long as the surface is nice and smooth/flat have at it!
but if it is uneven you might want to sand it down so the tiles will sit properly
One other thing that you will want to do is put a good coat of primer on before the tiles. This will not only help see were any imperfections are in the wall but also help keep the drywall patches adhered to the wall.
