Has anyone ever designed a "grid" on their ceiling using say 1x3's stained or painted along sheetrock seams?

In all probability the sheetrock seams are not centered on the ceiling, and they are staggered from sheet to sheet. Consequently your "grid" would not be symmetrical, and would be displeasing to the eye. You could make a grid on the ceiling, but don't try to put it over the seams.
