Placing words in wet cement?


Question:I saw a technique were you take a flattish mold of wet cement, and then set (gently -not too far into the surface) metal stencil letters into them. When the cement dries, you remove the metal stencil- and you now have an indentation in the cement.
(Think of what a gravestone looks like)
What is this technique called? I am having a hard time searching online for something I don't know what it's called.

Actually you take out the letters while the cement is still wet. I know they sell a kit at "Plow and Hearth". Try them on line.
