What are you wanting to protect it from? If you have mold or mildew clean it up with bleach/water mix. Then prime with a good primer like kilz and then paint with a paint that is made for the bathroom's high humidity area. You can get bathroom and kitchen paint at any hardware/home improvement or paint store. Just ask them for a formula that retards the growth of mold and mildew and is made for high humidity areas.

Wainscoting is best way for your bathroom wall protection
Clean them , prime them with cover stain ..NOT KILZ kilz sucks , and stinks up your whole house .go to a paint store get a good quality paint , remember , The more shine the paint has , the more protection you get , do not get cheap hardware store paint , or Lowe's or home depot . And for God sake leave wal-mart out of it ...go to a Sherwin Williams store , they have excellent paint for just for bathrooms. If there are no Sherwin Williams , go to a Porter , PPG, or a Benjamin Moore , the reason is obvious , cheap paint has more odor , because it is diluted with ammonia and takes more coats to cover, Paint is like everything else " you get what you pay for "
Or you can install shower wall ...it is fiberglass sheets that is attached to the wall using adhesive , I had to do this , but I also have 4 children .
make sure to keep the walls dry with a fan of some sort.
