A waterborne polyurethane will give you a beautiful finish without giving the piece a yellow cast. Some are a milky white in the bucket, but all of them dry clear and do not yellow.

If you are putting polyurethane on your chest you have a lot more to worry about than it turning yellow. Your nipples could shrivel up and fall off from lack of oxygen... Oh cheat as in chest of drawers - nevermind.. hehehe Seriously, the reason it turns yellow is because it is an oil bases product and you are most likely applying it over a latex paint. It is the over saturation that is doing it. Try using instead spray polyurethane and giving it a number of thin coats letting it dry inbetween.
It depends on the type of "white" paint that it is. Many older paints are less true white than the titanium pigment that I normally use in painting, and will continue to age even if coated with other materials.
If the coating is what has caused you problems in the past, however, you may just want to find a better brand (read all the fine print, and get advice at a "paint"-not just "home improvement" store).
I think you are safe: Most polyurethanes these days are quite clear. You can see if you can find one that refers to "UV protection" or non-yellowing or something like that which would indicate there are special ingredients that will prohibit yellowing from UV rays.
If you don't want yellowing, the thing you really need to stay away from is varnish, which is oil-based and is known for yellowing. Epoxies are also known for yellowing but again with them as with polyurethanes, they are being made with UV protection added in.
If this is really important to you, check out the paint section at a boating store--most boaters hate to have their paint jobs yellow on them so products made for boats usually have UV protection.
go to a hardware or paint store and get some lacquer finsih in a spray can and it will give you the clearness you want and plenty of protection. i use it all the time.
