The normal practice is to lay sheets of plywood or hardboard to make it level.
If it's floorboards you can hire proper floor sanders which do a good job of levelling.
I don't think a self-levelling screed exists for wooden floors!

you will need a reinforced [fibre] or latex additive for the cementitious leveller to resist cracking or breakdown
