Paint in the can: Its because after time the paint starts to seperate. Make sure you store your paint in a dark, dry, room temp or slightly cooler location.. that will help.
On the Walls: does anyone smoke in your house, if so that will GREATLY effect the color of your walls. Also the sun could be discoloring them turning them an off greyish color.
It does it because it gathers dust.
It's best to use a satin or acrlic based paint. flat is the worse paint it actully collects and holds dust!
