Hi, what space should you leave between 2 sinks in a bathroom?

Stand up, and put your hands on your hips[ assuming you are the tallest person in the house ]. Measure from outside elbow to outside elbow. Half of that should be the minimum between the sink basins.
P.S. they should be at least a sink width apart, or they won't look balanced.
May I suggest two medicine cabinets or one very large one, or one large mirror?
It depends on how much space you have in the bathroom. Why not a dual sink?

Enough room so that two people using them at the same time don't bump elbows. One meter, center to center, is more than sufficient; you could get by with a bit less.
Call a plumber, if you have to ask you most likely will not be able to install them properly, or at least consult with a professional. There are too many variables to consider before telling someone what distance to separate two sinks (type of sink, size of area, etc).

In the US; code requires 36 inches center line to center line at least 8 inches from edge to a wall on the outer edge.
