Granite is very popular right now and comes in dark or light. Also Corian by dupont is another alternative. It is a very durable solid surface counter and has a wide variety of colors. Travertine tile is another popular option, but I worry that my ay be a trendy thing. There is always the old stand by of Formica. People are tending to do more earth tones/neutral colors on their counters or dark granite.
Just be sure that you don't overdo it for the price range of home you have.

The concrete ones look amazing. You can get them in any color, any finish to match anything. They seal them so that they're just as easy to clean as regular counters.
Conceret is terrific, but it's more expensive than granite. You can try butcher's block type wood (not as practical but a new trend).
