How do I get epoxy to stop leaching when I laminate two granite strips to a countertop.?

you don't.

You make sure you have a rag with thinners when you attach any kind of laminate (although i usually see contact adhesive used rather than epoxy) and remove the excess before it sets. You always need to have more (eposy that is), rather than less so that the laminate doesn't come lose in years to come.
