Am I Alone in that people think I am Arrogant?
Question:I am set in my ways or am I just organized?. I want the towels folded the right way. I ensure that the glasses in the dishwasher are the same on the same side. My shirts are all folded the same way. My jeans are all hanging in the closet by size. My shoes are lined up like soldiers. I have my pots and pans in the cabinet by large to small (makes sense to me for space). I have my paper files according to topic.
Am I being overbearing? Or am I being organized?

Personally, I'd last all of about 6 seconds with someone like you.
Life is too short and far too enjoyable to even remotely concern myself with where the glasses in the dishwasher get placed, as long as the are upside down, I'm good.
Behavior is a spectrum, and I admit I am far closer to the left in the tidiness catagory. I am a cats-and-dogs-on-the bed person. You sound like you are far closer to the very end of the right side. People like you annoy the heck out of people like me, and vise versa, I am sure.
If your friends and family have brought it up as an issue with you, and it's not all funny-funny-ha-ha, you might have a problem. If you can't keep relationships long term because of this issue, you definitely have a problem.
You might feel the need to exert extreme control with your surroundings because you feel extremely out of control with some other area of your life. Maybe addressing the real issue will bring some perspective to this obsession with organization and you can find other, more fulfilling ways to derive pleasure, other than in your towel closet.

None of those things make you arrogant. Maybe overbearing if other people that live with you must keep their closets the same way. Definitely organized, maybe a little obsesive compulsive.
I think you might be a bit obsessive.
You are simply organized...! not at all arrogant...! Overbearing... mmm, well it depends on how far you may with this... if you'll go too far and act irracional then you may have OCD (obsessive compulsive disorder), but if you are reasonably organized then way to go! in both cases don't worry, just don't let it go 2 far...!
