Answers:
don't go the cheap or easy way out because someday you may want to sell it.

I'd definitely take the door down and build a wall. You would probably want a window there anyway (a bay window with a window seat would be cool).]
We paneled the inside of the garage door. You want to do it so you can still open it. It looks great.
Depending on a few different things, you might find it fun to leave the garage door there as a functioning door.

Your weather has to be temperate so you can heat and cool it, as well as protecting the interior of the space from rain, etc.

This would be a bit crazy to be sure but you know? Lots of people are trying to bring the outdoors in. If you are using it for frequent entertaining and/or parties, then you could throw the doors open and blur the lines between in and out. It doesn't have to be tacky. It could be very simple and industrial.

You would choose simple outdoor friendly flooring. I'm thinking that tinted concrete would be cool, put area rugs down to define spaces and make the space less echo-ey. For other surfaces, use durable fabrics.

You could put a mini-kitchen including a bar, a dining area. For entertaining, you could put in a pool table, a projection TV, etc. Designate a long wall for storage (curtain it off), and use furniture that offers some storage and you would get back some of the storage space you gave up by converting the garage. (for things like holiday items, out of season, sporting goods, etc.) Lots of these spaces would double as very hobby friendly spaces for things like gardening, laundry, and crafting.
