Perhaps the company you bought it from used formaldehyde-free particle board - and you don't need to do anything at all. Might be worth looking into.

The problem is that most things I can think of doing might end up being worse than the minimal off-gassing you'll get if it's regular particle board.

You could try sealing the particle board with a finish or sealant ... but despite improving technology, I don't think water-based finishes are gas impervious yet . Some solvent-based finishes seal much better, but are worse that the particle board for off-gassing VOC's and more.
