How to cover up particle board (new unassembled sofa) so the off-gassing doesn't pollute the air in the house
Question:

Sprinkle it with baking soda. Another option is to buy an air sponge. It soaks up all odors (even cat) and disappears when it's done.
Perhaps the company you bought it from used formaldehyde-free particle board - and you don't need to do anything at all. Might be worth looking into.
The problem is that most things I can think of doing might end up being worse than the minimal off-gassing you'll get if it's regular particle board.
You could try sealing the particle board with a finish or sealant ... but despite improving technology, I don't think water-based finishes are gas impervious yet . Some solvent-based finishes seal much better, but are worse that the particle board for off-gassing VOC's and more.
