I'm assuming you mean to other fabric? You can glue them on using a washable glue (Aileen's makes one), you can use stitch witchery (a fiberous product you put between the patch and the fabric and using an iron apply heat without steam to activate the product's adhesive on both sides) or you can sew the patch on.
Did you want to repair something or decorate? I recently repaired my sons jeans by taking the back pocket off to patch the rip at his knee - I pinned it on over the rip and then hand stitched it into place and then machine stitched it on.
For decorative patches (ie. applique style) you can buy a fusable webbing called visifix (different names in different places but the fabric store will know what it is). You iron it on to the patch, peel the backing off and then iron the patch on to whatever you want - it works on pretty much anything. You can then secure it even stronger with buttons or stitching if you like. I've made some really cute quilts for my babies beds using this method and some beautiful christmas stockings. It's really easy and works brilliantly.
