Letting the grout set up a bit while you finish the entire area will not cause any problems at all. In fact I find I like the results better. You are using a wet sponge to clean the excess grout and it will easily do the job. If you start cleaning too soon you can remove too much grout masking it more difficult to clean. The key is frequent changes of water and rinse the sponge well.

Allow it to set up for 15-20 minutes before dressing your grout joints and wiping down the tile. This allows the grout to cure to itself, making it easier to clean.
The added benefit is you won't wash out pigment from your grout joints. I handle too many calls where the installer has made this mistake.
