Personally I'd go with a polyurethane...it will be much more durable and will clean fairly easy.
If stained, use varnish.
stained wood?? ideally satin lacquer looks best but you need a pro painter to do it if you have no experience with lacquer then brush thin coats of satin poly , all oil and lacquers oxidize after several months (turn amber color ) you can use latex finishes but they don't brush very well good luck
Personally, I use a non-yellowing, UVB/UVA protecting polyurethane like, the products by Varethane. I like it for several reasons. It makes for easy clean up particularly in an area where there is high moisture, high grease and high food particles that can adhere to the surface. Having a non-yellowing composition to the sealant means that what I finish with I will always have. I do not have to worry about finish changes over time because what will change my finish is blocked. Moreover, it gives a hard finish which means that heat or other elements have no impact on what is underneath. It has been my choice since the technology was introduced and has save a lot of time, money and effort.
