it wont last to thin and probably wont stick
I hate to be the one to tell you this...but this is not going to go well for you. In order to get the spray paint to adhere to the laminate countertop, you would have to sand the top. When you sand the top, you are wearing away at the laminate...which is not that thick. So, at best you're going to get splotchy results that are going to flake off. Not only that, it's not going to be possible to get an even spray over the entire surface, so then you have a mottled look.
You can have them relaminated, which in the scheme of the other options available is the cheapest...and they have come out with some laminates that mimic granite.
It won't last very long... just until you place something sharp or with an edge to it on the surface.
If you really want to resurface a countertop, the best and least expensive way to do so is to remove the laminate surface that's on there now. Just scrape it off starting at a seam or the edge. Then, once that's done, go get yourself a new laminate to resurface it. There are some FANTASTIC ones out there! You'll find that this will last very long. I just redid a kitchen counter like this. It was white and now it looks like black granite. The total cost to remove the old one, buy the new one and install it was 120 dollars canadian...
