What Kitchen knives do they use at the White House? And what brand do you use?

I have no idea what kind of knives they use at the White House. But at the Blue House (that would be my house) I use only Rada knives. I use the stainless steel handled knives. In my opinion they are the best knives around. If you do not put them in the dishwasher they hold an edge forever. And you can not beat the tomato knife.
Find them at Rada.com.
In an online interactive forum for the White House, Chef Walter Scheib describes the knife choice to be a personal one. He fails to disclose (intentionally I am sure) the brand of knife he uses. I did a lot of testing on my own in search of decent yet affordable knives and ended up purchasing mine from Viking. Instead of wasting money on a set of knives that often include pieces that I would never use, I bought open stock. The ones I use the most: a pairing knife, utility knife, santoku knife (instead of a chef's knife), and a slicing knife. Next on the list is a boning knife! They are easy to sharpen and clean, and probably the best knives that I test drove. (My second favorite was Global, but they were discontinuing pieces). It really is personal choice of how the knife fits in your hand, weight, how well it works. My friend. who is a pastry chef, uses a cheap stamped knife instead of a forged knife because of the weight. My suggestion, go some place where they will let you test them out!
